Food Cost Analysis through Case Study; On completion of this section the student will be able to analyze a food service's Food Cost and identify the areas concern and design and execute a plan to correct the problem.
Journaling; At the end of this section the student will have created a journal identifying their challenges, explaining the difficulties and develop a procedure designed in their own words to complete the task.
Scaffolding/Blogging; At the end of the course the student will be able to design, execute and duplicate a restaurant feature, describe the dish, and create an image for publication.
